why does fresh wheat matter?

Fresh-milled wheat has recently become a popular option for healthier baking at home. But is it worth the extra planning and equipment? Why not just buy a bag at the store?


  • Peak Nutritional Value: Flour begins to lose its nutritional value as soon as it's milled. Fresh flour is rich in vitamins, minerals, and fibers—elements crucial for a healthy diet.
  • Richer Flavor: Freshness is everything. Milling grains just before baking preserves the natural oils and ensures a depth of flavor that store-bought flour often lacks. 
  • No Additives, Just Nature: Commercial refining strips wheat of nearly all its nutrients. Mass-produced flours often contain additives to put back a fraction of those nutrients and extend shelf life. Freshly milled flour is pure, unadulterated, and as natural as it gets. This can mean better health for you and a better taste for your baked goods.


Milling and using the whole wheat berry can give you all the nutrients contained in the wheat. It is one of the best sources of vitamin E, has naturally occurring folic acid, B vitamins, and iron, and is full of fiber to help with digestion. The wheat berry has three main parts and, when consumed together, they provide these essential nutrients. 

About the bakery

Valley Mill Bakehouse started to offer a better option for treats in our hometown. I use only fresh-milled, organic, soft white wheat for the freshest flour. Organic and locally grown ingredients are my go-to. Seed oils are not allowed!  


 As a homeschool mom of four, I started baking to keep our costs low and enjoyment high! There's nothing in here I wouldn't feed to my own family. All of these recipes meet my standards for quality and are kid and husband approved!  


It's not just the ingredients--it's the process, too. I use unbleached parchment paper and cupcake liners and stainless steel or cast iron whenever I can.   


Baked with love. Not preservatives. Because you deserve real food.

All of the ingredients we use are chosen for freshness and quality. Everything from the wheat to the butter to the chocolate, sugar, and flavorings are organic. I source locally grown apples for our autumn offerings. And the toppings and colorings use natural colors and flavors.
